Recipe - My tasty and frugal pancakes
Years ago, pancakes were an almost everyday breakfast item, households always bought flour in 10 LB bags, and went through that much every week, with all the baking going on.
Today, mixes are popular, just add water, but suffer in taste, quality and cost.
My pancakes cost about 25 cents a batch to make, and are sooo good.
Recipe:
1 cup buttermilk
1 egg
3 tablespoons butter
1 teaspoon sugar
1/2 teaspoon kosher salt
1 teaspoon baking soda
12 tablespoons flour
Who has buttermilk laying around? Not me either, so regular milk is OK. I use 2%
Also, I use 6 tablespoons flour and 6 tablespoons buckwheat flour, yummy.
In a bowl, add the flour, sugar, salt and baking soda and mix it well.
Now add the milk, egg, and the butter (or margarine). Stir it up but not too much, lumps are needed!
The colder the mix the better, the cold milk should make it the right temp, so cook it as soon as it is made, or pop it in the fridge a little.
Heat the pan hot with a little oil spread thin with a paper towel, should be hot to barely make a little smoke, just a little, if too much turn it down a bit.
Pour the batter in and let it cook until the bubbles start to break, then turn them over.
Over time after making these you will learn the best times and temps.
When you go to the store next time, get some baking powder and some Crisco, so we can make fresh homemade biscuits.
